Vegan Spinach Stuffed Pasta
This vegan spinach stuffed pasta dish is hearty, filling and absolutely delicious!

1 1⁄2 cupunsalted cashews
2garlic cloves (chopped)
2 tablespoonsLemon juice
1⁄4 teaspoonblack pepper
1⁄2 cuptofu (crumbled)
1⁄4 teaspoonred pepper flakes
1 tablespoonchives (chopped)
1 cupspinach (chopped, with extra for the garnish)
2 cupsvegan pasta sauce
1 cartonlarge vegan pasta shells (cooked)
2 tablespoonsolive oil
1⁄2lemon (sliced as wedges, optional)
Add 1 1/2 cup unsalted cashews, 2 chopped garlic cloves, 2 TBSP lemon juice, 1/4 tsp black pepper, 1/4 tsp salt, and 1/4 cup water to a food processor and process.
Move mixture to a bowl and add 1/2 cup crumbled tofu, 1 tsp oregano, 1/4 tsp red pepper flakes, 1 tbsp chopped chives and 1 cup chopped spinach and mix it all together.
In a deep dish tray, add some vegan pasta sauce (about 1 1/2 cups) and begin generously stuffing pasta shells with the cashew/tofu mixture and placing them in the tray on top of the sauce.
Drizzle some olive oil on top and more of the remaining pasta sauce.
Bake at 350 degrees Fahrenheit for 25 minutes.
Place stuffed pasta shells on a bed of spinach and add some of the sauce from the tray on top. Add some lemon wedges around the plate and enjoy!
