Restaurateur Ravi DeRossi to Give a Vegan Makeover to His 15 Restaurants & Bars!
While many are looking forward to (or dreading) Valentine’s Day coming up this Sunday the 14th, there is officially a new reason to mark that date!
Ravi DeRossi, a New York City based restaurateur, has announced his plans to convert his 15 prominent restaurants and bars into vegan ones, beginning with his famous tiki bar, Mother of Pearl.
While DeRossi was a vegetarian and then a vegan long before he began a successful career in the restaurant industry about 11 years ago, he told Eater that he made some compromises to his lifestyle due to the nature of the business he was in. While he returned to a mostly vegan diet a few years ago, after his cat was diagnosed with a terminal illness last Christmas, he saw things a little differently in terms of his impact on the environment. He stated:
“If we’re going to do something to help this planet, it needs to start. It needs to be me not just preaching, but me just doing it. I’m in the position to do it. You don’t realize that the average restaurateur does three times more destruction [to the environment] than the average person. I have 15 restaurants and bars. It started to weigh on me.”
After the conversion of Mother of Pearl, next up will be one of his most successful restaurants, The Bourgeois Pig, famous for its cheese plates, fondues and charcuterie. During the summer it will be reopened as LadyBird, a vegan wine and tapas bar.
His upscale vegan restaurant, Avant Garden, located in Manhattan, will also experience some transformations. DeRossi plants to expand it in a building in central Williamsburg to serve as a hotspot of all things vegan. It will include an bistro, a tasting table with vegetables grown on the rooftop garden, a vegan butcher shop, and the base for a vegan sandwich shop, which will open in several locations around the city, called Avant Garden and Club.
With so many huge changes in store for all of DeRossi’s well-known restaurants and bars, when he was asked if he was worried about any financial losses due to the switches, he stated:
“I’m more worried about my conscious and living without the weight on my shoulder of the damage I’m doing, and the suffering of animals.”
