ESPN Highlights Vegan Soccer Player Toni Pressley

ESPN recently did a feature on vegan soccer player Toni Pressley, who currently plays with the Orlando Pride of the National Women's Soccer League (NWSL).

The 27-year-old has been vegan for four months, initially adopting a plant-based diet as an "experiment," but committing to it after noticing she was "getting leaner and had more energy on the field." Pressley states:

"I loved learning about which substitutions I could make and how to reinvent recipes and food. There are so many options available that veganism is not as hard as many people think. I make sure I get my protein with plant-based protein shakes, tofu, meat replacements (I really like pea-based options), and I also take a daily vitamin."

In the feature, she shares her own homemade recipe for mushroom risotto, stating it is one of her "favorite things to eat on this planet!" To check out the recipe and the feature, visit this link.
