No Bake Vegan Cheesecake

This is a recipe using the traditional Cool Whip no bake cheesecake recipe. All ingredients are substituted with vegan alternatives. Most graham cracker ready made pie crusts are serendipitously vegan, so you can use an already made one to make this recipe fly together. (You can find vegan cool whip, made out of coconut milk, at Whole Foods) Optionally, top with frozen/canned blue berries or strawberries.

Yields: 8 Servings
Instructions:
Mix vegan cream cheese and sugar together until smooth. Fold in vegan Cool Whip. Again, mix until smooth. Pour mixture into crust. Chill at least 2 hours before serving.

Ingredients:

16 ounces Vegan cream cheese
1 cup Sugar
1 1⁄2 cup vegan cool whip
1 can blueberries
