Spicy Potato Wedges

Craving fries but want to keep it on the healthier side? Going homemade and baking them is the perfect excuse to have them!

Yields: 2 Servings
Instructions:

Ingredients:

3 rustic potatoes (sliced)
2 tablespoons olive oil
1⁄2 teaspoon salt
1⁄2 teaspoon garlic powder
1⁄2 teaspoon Pepper
1⁄2 teaspoon Cayenne pepper
1 tablespoon Italian seasoning
2 tablespoons fresh parsley (chopped)

Steps:

Chop the potatoes length-wise into good-size wedges
Add olive oil and toss by hand
In a small mixing bowl combine the salt, garlic powder, pepper, cayenne pepper and Italian seasoning. Mix with a fork or spoon.
Sprinkle some of the spice mix by hand onto the potato wedges. Mix by hand, then sprinkle more of the spice mix and mix again.
Arrange potatoes on an oven pan, then bake at 450 degrees F (230° Celsius) for 30 minutes
Sprinkle with the fresh parsley, and serve hot!
