Yields: 4 Servings
|2 tablespoons||olive oil|
|16 ounces||Extra Firm tofu|
|8 ounces||Seitan strips|
Heat 1 tbsp olive oil in a wide skillet. Add the onion and saute over med heat until just beginning to brown. Stir frequently.
Blot tofu well with layers of paper towel. Cut tofu into 6 crosswise slabs. Cut slabs into strips.
Transfer onion to plate and set aside.
Heat the remaining oil in same skilliet and add the tofu and seitan. Saute over med heat until golden.
Return the onion to the skillet and add the scallions . Saute for another 2 min’s.
Serve over rice, couscous, or on top of salad. Enjoy!
