Tofu Faux French Toast

Instructions:

Ingredients:

1 Block firm tofu, pressed
1 cup Coconut milk
1⁄2 teaspoon Nutmeg
1⁄2 teaspoon Rum extract
1 Banana (For tofu marinade)
1⁄4 teaspoon Nutmeg (For batter)
1⁄4 teaspoon cinnamon
1 Banana (For batter)
1 Banana, sliced (For syrup)
6 Strawberries
1⁄4 cup maple syrup

Steps:

Tofu: Press tofu until no more liquid is released. Stand brick on thin end of tofu and carefully slice tofu into large squares, approximately ½ inch thick. Once complete, slice each square on the diagonal to create triangular pieces of tofu. In large, shallow baking dish, mix coconut milk, ½ tsp nutmeg and ½ tsp rum extract. Place slices of tofu into dish and allow to rest for at least 20 minutes. Reserve marinade for the batter.
Batter: Place remainder of batter into blender. Add 1 peeled banana, ¼ tsp nutmeg and ¼ tsp cinnamon. Blend for 30 seconds or until smooth. Pour batter into shallow dish.
Pre-heat well oiled or non-stick pan over medium high heat. Dip each triangle of tofu into the batter mixture, ensuring that each side is well coated. Place battered tofu into pan and allow to cook for 3-4 minutes, ensuring not to move the tofu while cooking. Flip and allow other side to cook for 3-4 minutes. Remove from heat, keeping warm in oven, if necessary.
Syrup: mix ¼ cup maple syrup, sliced bananas and sliced strawberries in small sauce pan. Heat, stirring often, until mixture is warm and fruit has softened.
Pour syrup over prepared tofu faux french toast. Enjoy!
