Vegan Spinach Stuffed Pasta

Instructions:

Ingredients:

1 1⁄2 cup unsalted cashews
2 garlic cloves (chopped)
2 tablespoons Lemon juice
1⁄4 teaspoon black pepper
1⁄4 teaspoon salt
1⁄4 cup Water
1⁄2 cup tofu (crumbled)
1 teaspoon oregano
1⁄4 teaspoon red pepper flakes
1 tablespoon chives (chopped)
1 cup spinach (chopped, with extra for the garnish)
2 cups vegan pasta sauce
1 carton large vegan pasta shells (cooked)
2 tablespoons olive oil
1⁄2 lemon (sliced as wedges, optional)

Steps:

Add 1 1/2 cup unsalted cashews, 2 chopped garlic cloves, 2 TBSP lemon juice, 1/4 tsp black pepper, 1/4 tsp salt, and 1/4 cup water to a food processor and process.
Move mixture to a bowl and add 1/2 cup crumbled tofu, 1 tsp oregano, 1/4 tsp red pepper flakes, 1 tbsp chopped chives and 1 cup chopped spinach and mix it all together.
In a deep dish tray, add some vegan pasta sauce (about 1 1/2 cups) and begin generously stuffing pasta shells with the cashew/tofu mixture and placing them in the tray on top of the sauce.
Drizzle some olive oil on top and more of the remaining pasta sauce.
Bake at 350 degrees Fahrenheit for 25 minutes.
Place stuffed pasta shells on a bed of spinach and add some of the sauce from the tray on top. Add some lemon wedges around the plate and enjoy!
